- Preheat your waffle iron.
- Combine the bananas, eggs, buttermilk, vanilla, and brown sugar in a bowl and whisk until smooth. (You can also combine in a blender and pulse smooth.)
- Combine the flour, cornstarch, baking powder, baking soda, salt, and nutmeg in a mixing bowl and whisk to combine. Add the wet ingredients and stir until well mixed. Stir in the melted butter.
- Pour batter onto the hot waffle iron and cook until crisp and browned. Serve with the toppings of your choice.
